Easy Red Velvet Cookies

It was Aaron's birthday 3 weeks ago!! Yes, 3 weeks ago and now just getting to this post ;)
He is a huge fan of red velvet cake and cupcakes.  I decided to change things up and make him red velvet cookies! I love to bake, but I do not have the time (or sanity) to make red velvet batter from scratch. Plus the kids wanted to help bake, and I just envisioned all the bottles of red food dye and their stained little hands...you get the picture. So, I doctored up a box of red velvet cake mix for the cookies and they turned out great!! These were a great way to make some quick red velvet treats! They required way less time, effort, and mess than making from scratch - and I would say they taste just as good. I added cream cheese frosting to some of them too!

  • 1 box Red Velvet Cake Mix
  • 2 eggs
  • 6 Tablespoons unsalted butter (melted)
  • Powdered sugar
    • OR
  • Cream cheese frosting
    • 4 Tablespoons unsalted butter
    • 4 oz cream cheese
    • 2 cups powdered sugar
    • 1 teaspoon vanilla extract
      • Blend softened cream cheese and butter and vanilla until lumps are gone.
      • Slowly add powdered sugar while mixing slowly.
      • Continue to mix until creamy.
  1. Preheat oven to 375°F
  2. Stir together the cake mix,  melted butter, and eggs until well blended. It should have the same consistency as cookie dough. 
  3. Form dough balls. This can be a little messy!
  4. If you wanted to roll in powdered sugar; you could do so at this point. I did not and just sprinkled on at the end.
  5. Drop onto an un-greased baking sheet. I slightly flattened each dough ball.
  6. Bake for 9 to 11 minutes or until set.
  7. Let cool. 
  8. Frost with cream cheese frosting (recipe above -or buy!) or sprinkle powdered sugar on.
