Easy Mini Vegetable Pizzas





Like most moms, I have to sometimes fight my kids to eat their vegetables. While they aren't overly picky eaters, they do tend to bargain with me on how many bites of vegetables they have to eat before being excused from the table. So when I find a recipe that includes lots of veggies AND they love it, I put this recipe on repeat. I made these mini vegetable pizzas a couple months ago when I was trying to use up some things in the fridge - which seems to produce some of my best recipes ;) The kids LOVED these and liked to help add the toppings. I have made them a couple different ways and each time they request seconds :)

What you will need:

Pizza "crust" 
- For these pizzas, I used Grands biscuits - which of all of the crusts we have used, these are our favorite. Prior to baking, I hand stretched them on the baking sheet and then cut them in half after they were baked and cooled.

- I have also used English muffins and (baked) crescent roll dough

Pizza "sauce"
- 8 oz package of light cream cheese
- 1 packet of ranch dressing seasoning

- I have also used Alouette spreadable cheese

Pizza Toppings
- Use up those veggies in the fridge!
- We usually use broccoli, cauliflower and carrots.
- Tomatoes, avocados, green onions and cucumber are other yummy options.

Prepare: 
- Bake or toast crust as recommended on package
- Allow to cool
- Mix ranch seasoning with cream cheese (to taste)
- Chop vegetable toppings small (to allow for more toppings on small pizzas)
- Spread topping onto crust
- Add your favorite toppings - this is the kids' favorite part!
