Healthy Zucchini Bread





Hi! I hope you all had a great weekend! We had such a great, laid back weekend. Today we picked several HUGE zucchinis from our garden, and decided to make some zucchini bread with it. I LOVE zucchini bread, and luckily my kids have inherited this same love (but really, who doesn't love this yummy bread?!). My healthy zucchini bread happened by accident...I went to make my usual recipe, but was totally out of vegetable oil. In the past, I have substituted apple sauce for vegetable oil, but this was usually for muffins or other recipes that require small amounts of oil. I figured it was worth a try, so I substituted apple sauce in and the bread turned out great!! It is still just as moist as my usual recipe and I think tasted just as good! Now I feel less guilty about finishing off half a loaf tonight ;)

This recipe makes 2 loafs - I made one with walnuts and one without. One large zucchini can usually yield at least 2 cups (I am talking the huge garden grown ones).

Here are the details:

Ingredients:
1 cup unsweetened applesauce
2 cups granulated sugar
3 eggs, beaten
2 cups grated zucchini squash
1 tsp vanilla

3 cups flour
3 tsp cinnamon
1 tsp salt
1/4 tsp baking powder
1 tsp baking soda
1 cup chopped walnuts (optional)

1. Preheat oven to 350 degrees
2. Mix oil, eggs and sugar
3. Sift flour, salt, cinnamon, baking powder, & baking soda
4. Add nuts
5. Pour mixture into 2 greased loaf pans
6. Bake for 60 minutes
