Lemon Poppyseed Muffins

I am finally getting around to sharing that yummy poppyseed muffin recipe I mentioned a couple weeks ago! The kids have loved it! I substituted the oil with some greek yogurt and, it took a couple modifications, but I think I finally figured it out! The glaze on top is the best part :)

Lemon Poppyseed Muffins  - makes 12


1 1/2 c. flour
1/2 tsp salt
1/2 tsp baking soda
3/4 c. sugar
1/2 c. softened butter
1 tsp vanilla
2 eggs
1 Tbsp lemon juice
2 Tbsp lemon zest (I substituted an extra Tbsp of lemon juice when I didn't have a lemon :) )
1 c. vanilla greek yogurt
1 Tbsp poppyseeds

Glaze Topping:

1 Tbsp lemon juice
2 Tbsp melted butter
1/2 c. powder sugar


  • Preheat oven to 400 degrees
  • Combine baking soda, salt, and flour in a bowl
  • In a separate bowl, mix together butter, sugar, and vanilla
  • Add eggs, greek yogurt, lemon juice & zest to butter & sugar mixture
  • Slowly add in flour mixture (do not over mix!)
  • Stir in poppyseeds 
  • Add batter to greased (or lined) muffin tin
  • Bake for 15-18 minutes
  • Cool prior to adding glaze
Lemon Glaze (optional)
  • Melt butter in microwave
  • Mix in lemon juice
  • Lowly add powdered sugar and stir until powder dissolved
  • Slowly drizzle glaze over muffins
