I came across a muffin recipe years ago that has become a frequently requested breakfast around our house. I recently modified the recipe to make them into bars and they are sooo good!! I made a double batch to bring with me to my parents for the weekend. We all end up grazing on these bars the entire weekend. The best part of this recipe is you can use any berries you have on hand.

Serves: 9-12 (9 if you cut servings large like I do!)
7 Tablespoons melted butter (unsalted)
1 egg yolk
1/3 cup milk
1 teaspoon vanilla extract
1 1/2 cups flour
3/4 cup granulated sugar
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1 cup fresh blueberries
1 cup fresh strawberries (can use any combo of fruit to total 2 cups)
3 Tablespoons cold butter
1/2 cup flour
3 Tablespoons granulated sugar
Preheat oven to 375 degrees. Grease an 8×8 glass pan. *I will a lot of time double the recipe when serving a larger group and use a 9×13 glass pan.
In a medium bowl, combine the milk, egg, egg yolk, and vanilla. Wisk the ingredients together until thoroughly incorporated.
In a separate medium bowl, combine the flour, sugar, baking powder and salt. Then add the liquid mixture gradually while stirring. Carefully fold in the berries. Pour into glass pan.
Combine flour and sugar. Then cut the butter in using a fork. Continue to mix until crumbly. Sprinkle evenly over the bars.
Bake the bars for 25min until the top is slightly golden. Cool in pan for 15min. Serves great warm!
